Back in December 2004, I opened Mosaic - Modern Fusion Cuisine; the first tapas and fusion restaurant downtown. I had a lot to say about my style of food and our city's lifestyle. A lot of guests have heard us.
Downtown is an absolutely vibrant place, from the loft dwellers to the game and sports enthusiast, everyone is participating in the new urban renewal downtown as a way to enjoy and add to the lifestyle that only city living allows.
Our Evening Tapas concept taps into this rich lifestyle and gives diners a wider spectrum of flavors. It is similar to the way most of the Pacific Rim regions spend time eating, where one is served many dishes and have small tastes of each. This is the way I love to taste food. It is a clean and refreshing approach to food where our guests can sit back and enjoy their evening and walk out feeling comfortable and satisfied rather than "tightly full".
I am after the "WOW" factor, you know, the feeling when you see the dish at first and it looks unexpectantly brilliant. Then when you taste it, it burst with flavour and "hits" your palette from mild to intense. I work with pure ingredients as well as techniques learned over half a lifetime of cooking in many different and sometimes exotic locations. This allows me to orchestrating layers of flavor in a smaller number of courses which gives me a great opportunity to ensure that you hit the "WOW" factor as well...
In March 2008 we moved our restaurant to 1001 Washington Avenue. Literally one block east. We love the new location and are currently planing to enlarge the existing space to add over 2500 SQF of new bar area as well as modern event space.
